  ADVANTAGES TO BUYING DIRECT
By The Side 
Riteway Meat Company is very fortunate in having the opportunity to process for some of the best beef and pork ranchers in the country.  If you are tired of spending your hard earned money on high priced, flavorless beef and pork than let us know, we can refer you to one of our many local premier beef and pork producers.
Why Buy Direct? 

When buying direct from the farm the animal is sold by the hanging weight of the dressed carcass. You can purchase a whole, half or a quarter (beef only split half) carcass. You will be charged two fees, one by the farmer for the price of the carcass and the other by Riteway Meat for processing, both are based on the hanging weight of the animal. All prices are quoted at the time of order.  All fees are to be paid when you pick up your meat after all processing is complete. Hanging weight is the weight of the animal after it is slaughtered and does not represent the amount of take home weight.

What To Expect 
Beef Processing 

The average hanging weight of a whole beef is approx. 600-700 lbs, 300-350 lbs for a side. The expected take home weight from a side of beef is approx 195-228 lbs (this is an approx average and may vary due to cutting specifications).  To find the true cost of your actual take home meat you would divide the total cost by the actual take home, at today's prices the approx. true cost is $4.10-$4.50 lb, premium steaks at your local grocery store are running well over $10.00 lb, quality ground beef over $5.00 lb, again this depends on your cutting instuctions and any extra's you decide to get.

Pork Processing 

Pork carcasses are sold either whole or half, quarters are not available. The average hanging weight of a whole pork carcass is 160 lbs. The expected take home weight of a whole pork is approx 140 lbs, again is based on your cutting specifications. Processing time for either a whole or half pork is 3-4 wks. All curing and smoking is done on site at Riteway Meat.

The time from when you order your beef to taking it home is an average of two-four weeks. There may be an additional wait time when ordering quarters.
